This is a most lovely St. Patrick's Day posting! I'll treasure your Corned Beef with Cabbage recipe and guard it with my heartstrings.

Oh the music and dancing videos are the icing on the cake. This is a wonderful post deserving six stars, but I only have five... IOU an extra star whenever I see one available on another of your posts.

    I'm so glad to know your first name Rebecca. :) Hope you have a wonderful holiday and enjoy this recipe for years to come. You can make it without the corn beef just by adding the ale to the potatoes, carrots, and cabbage, just a few peppercorns, and bringing to a low boil in a large cook pot wit lid. About 25 minutes will do it until it's fork tender. I cook this cabbage concoction all the time, and it doesn't have to be a holiday. A low budget wonder. Being of Irish descent I am a fan of cabbage. And this sounds like a terrific recipe with a substitute for the corned beef of course.

I've never heard of gold fingerling potatoes, but I do love the sound of them, and yes potatoes are always great with cabbage.

    Thank you very much for the excellent review and the fellowship of Riverdance. Yes, you can make this Vegan by just omitting the excess water and corned beef. Do keep the music and dance.

    Vegan recipe: In a large cooked pot combine 12 ounces of pale ale or hard cider to the pot along with a medium cabbage cut into 1/8 sections, two medium carrots cut into bite-size pieces along with 16 small gold fingerling potatoes. Add a few pink peppercorns for seasoning. Bring to a boil and reduce to low for 25 minutes with the lid on. It should be fork tender. I have this anytime! Hey Sal. I have only eaten corned beef once in my life. Remember, I grew up in Appalachia, and my grandma told me thick sliced bologna was steak. :))). I didn't have real steak until I was drafted into the Army. I will build my courage and give this a try. I'll let you know. You're having a party on this post. :)))

Thank you so much for sharing your recipe. How fun and generous of you to provide us with a favorite. I am Irish by descent (42% according to Ancestry.com, lol). My father was a Shannon, and was as Irish as an American born could be. We got a taste of the culture growing up, but now enough.

I enjoyed the show as well.

This was a fun share, Sally! We do adore our corned beef over here in Ireland, and your recipe seems like a great one to try out! Unfortunately the Patrick's day excitement has been dulled and cancelled in the country, but that doesn't mean we can't have nice food!

    Thank you so much for stopping by for the fun and food. It really is good. If you prefer vegan, just omit the water and corned beef and use just a few peppercorns. Bring to a boil in a large pot and simmer on a low boil for 25 minutes until fork tender. It's superb. A low budget marvel.
