First things first, your granddaughter is adorable! Secondly, the poem is very sweet and playful. Line 11 is the only line which is not constructed of 5 syllables. Is there a reason why?

5 stars for cuteness. I would capitalize Mouse after Minnie. I think this is sweet and would look nice on a poster or card on your granddaughter's birthday, or the next family occasion, whenever that would be.
