Christmas Lunch
Bacon wrapped Venison

Hope you enjoyed as much as my hubby used to.
6 slices of bacon 2 (3/4) pound venison tenderloins roasts
2 teaspoons olive oil divided
1/4 teaspoon onion powder,divided
Kosher salt and black pepper to taste
2 tablespoons butter
1/8 (ounce) package sliced mushrooms
2 cloves garlic,chopped
1table spoon of green onion, or more to taste
1/2 cup heavy whipping cream,or more to taste
Directions:
Preheat the oven to 375:degrees F
Arrange bacon slices on a slotted baking pan
Step 2:
Bake bacon in preheated pan partially cooked but still flexible,6to8 minutes.
Step 3:
Brush venison with olive oil and season with onion powder,salt and pepper.
Place tenderloin roast side by side wrap them together in strips and place in roasting pan.
Step 4:
Roast in the preheated oven until the bacon is browned an an instant meatbthermoter reads at least 145F About 1 hour.
Step5:
Heat butter in a saucepan over medium heat , add mushrooms,and garlic;cook stir and cook mushrooms till soft, 8 to 10 minutes. Stir in green onion?
Stir in cream and cook,stirring often,until heated through serve sauce with tenderloins.have wit rice or mashed potatoes.

We do this so he can hunt in the morning then it for lunch and go back for the Afternoon hunt. Since he donĂ¢??t like turkey we have venison instead.
