Save the World with Carrot Cake

If I could feed the world in need,
I'd make a carrot cake;
I'd use a boat of note,
Hot sun then would bake.

In a gale I would set sail,
To move the cake with speed;
The sponge will plunge the ocean wave
With hungry mouths to feed.

And when they see the ship at sea,
Coming into shore,
The carrot cake, instead of steak,
Is healthy food in store.

I choose this recipe infuse,
I do not need a book;
No expert chef for Unicef,
But this, I know how to cook!


This poem is not meant to offend and I know the seriousness of the food shortage in third world countries. I am not a great cook, but I do know how to make a carrot cake, and it keeps for days and would be an ideal food to feed the world, they would love it!

I been asked by Tier for the recipe. So here it is . . .



175glight muscovado sugar.
175ml sunflower oil. Sunflower oil. A variety of oils can be used for baking.
3 large eggs, lightly beaten.
140g grated carrot.
100g raisins.
Grated zest of 1 large orange.
175g self-raising flour.
1 tsp bicarbonate of soda.

For the frosting:
50g butter, room temperature.
75g full-fat cream cheese.
1/2 tsp vanilla essence.
100g icing sugar.
1 Tbsp walnuts, chopped


Heat the oven to 180C fan160C gas 4. Oil and line the base and sides of an 18cm square cake tin with baking parchment.

Tip the sugar, oil and eggs into a large mixing bowl. Lightly mix with a wooden spoon. Stir in the grated carrots, raisins and orange rind.

Sift the flour, bicarbonate of soda and spices into the bowl. Mix everything together, the mixture will be soft and almost runny.

Pour the mixture into the prepared tin and bake for 40-45 minutes or until it feels firm and springy when you press it in the centre. Cool in the tin for 5 minutes, then turn it out, peel off the paper and cool on a wire rack. You can freeze the cake at this point, if you want to serve it at a later date.

Beat the frosting ingredients in a small bowl until smooth. Put the cake on a serving plate and spread the icing on the top, decorate with walnuts
