Good Ole Fashioned Food
Good Eats
by country ranch writer
Well, lets we if I can do this justice. In my world food consists of many delicious fares. My Grandma used to say the way to a man's heart is through his stomach. Grandpa used to agree with her patting his stomach laughing.
Growing up we didn't eat fancy but we ate, we never went away from the table hungry. If anyone went hungry it was their own fault. Grandma always could find something to feed the hungry. The kids were always fed first then the grown-ups it was important to Grandma. She said a healthy child creates a healthy mind.
We grew our own vegetables and raised our own chickens, pigs, ducks, and turkeys. We'd barter for the other things we wanted like steak. We weren't rich by no means but we had love, Grandma said that wasn important and no one could take that away from us.
During hunting season there was always room for deer meat and turkey for the freezer. Here are just a few of the meals we had.
My favorite meal of all times was fried chicken, with mashed potatoes, and gravy, corn on the cob with
biscuits were a big hit and peach cobbler for dessert. We'd have that for Sunday dinner as Grandpa's friends would come to play music. Grandma always loved to hear Grandpa play. They'd sit for hours out on the back porch playing music. Grandma would sit and shuck peas or beans while listening and the kids would shuck corn. There was always food to be put up for canning for the hard times' winter brings. Fruit like peaches and pears were canned and apple butter too.
Beans and ham hocks with rice and biscuits were a big hit with the family. Tomato gravy and rice was another favorite of my Grandpa's as well as black eye peas.
Deer meat can be made into so many things. Deer stew, barbeque back strap, deer chili, and roasted deer shoulder.
Wild pig is a treat baked with butter and onions and taters cooked slowly in the oven. Pork shoulder on the grill is good for pulled pork sandwiches. I am hungry just writing about all this good food.
Pork chops are delicious and also pork loin can be stuffed with stuffing and baked with sweet potatoes on the side.
Home made spaghetti sauce is a favorite for all the kids, using the sauce this can be used to make meat balls and spaghetti, chili, chili Mac, tacos and etc.
Rice was used a lot at home for many things like rice and tomato gravy, chicken and yellow rice, gizzards, and rice.
Duck and gravy can be put over rice or potatoes and veggies on the side with biscuits also some liked corn bread with it too.
Turkey can be made into so many meals, like turkey pot pie, turkey and gravy over rice, potatoes, or even bread. Hot open-faced turkey sandwiches are terrific!
Chicken which is my all time favorite can be made into so many things, chicken and dumplings, chicken salad, barbequed chicken, fried, baked, broiled, pot pie, fried chicken is a must for Sunday dinner, it is good for a picnic with salads to go along with the fare.
Grandma and I used to make pies and cookies for all occasions, we made homemade fudge and peanut brittle. Grandma always said, "where there is a will there was always a way, you have to make hay while the sun shines." Nothing ever went to waste.
Fishing was great back where I lived so this was another bonus for us. Fish, grits, French fries, beans, and cornbread was a family favorite! Smoked fish was a big hit for some, baked fish was good also but I have to confess I love fried fish as much as I love fried chicken.
Fried eggplant fries and fried okra was my Grandpas favorites to cook and sweet potatoes fries were my favorite to eat.
Food is simple to fix all you need is imagination just ask my Grandma she was the greatest cook I ever knew. She learned from my GreatGrandma so as they say like mother like daughter!
Hoping you all enjoy reading this as much as I had writing about it!
