Hi Jim.
I want to wish you a speedy, healthy and full recovery. We need you back posting ASAP!
In order to help you along, I'm going to provide you with a mouth watering culinary post which I think should be right up your alley based on a few reviews you've given me in the past referencing a bagel.
This review from you gave me a chuckle:
I have to be careful. Since my bouts with covid, my taste and digestion have changed. Things I used to love don't work with me and things I can eat raise my blood sugar. Today I made bagel sandwiches. Will probably need much insulin tonight...
So Jim, for you today, I plan to deliver a "bagel and a schmear".
(Those of you unfamiliar, schmear is a Yiddish word that refers to a spread that goes on a bagel, as in cream cheese)
You know me... a plain 'ol bagel and a schmear simply won't cut it. I have to breathe some life into this, so ...
Let's raise the ante to spread a little cheer
With delightful ingredients for the bagel with a schmear,
Therefore :
I present to you one of my favorites... the FLAGEL.
(Flagel, a flat bagel. Once boiled, the bagel is flattened before baking, resulting in a thinner, crunchier product)
My favorite flagel is quelled with poppyseed. It'll keep you busy all day long, picking out those poppyseeds from your teeth and gum line!
Now, how do I go about building this flagel? I'll provide two options, for breakfast or lunch.
Breakfast flagel sandwiches :
1). Chive cream cheese spread, Taylor ham (some may say pork roll ... wrong!), thinly sliced red onion. Simple yet delicious.
2). Open faced flagel - smashed deviled eggs, paprika, watercress and a drizzle of EVOO.
3). Drizzle honey on both half's, 3-4 pieces of fried Canadian bacon, loaded potato hash browns with red pepper & onion and grilled zucchini.
Lunch-a-flagel :
1). Speck prosciutto (speck is a smoked prosciutto), yellow heirloom tomato, thinly sliced radicchio and believe it or not, mayonnaise (trust me on that).
2). Balsamic marinated grilled chicken (just off the grill), roasted red pepper hummus, arugula and a drizzle of fig balsamic glaze.
3). Garlic confit spread, fried eggplant, mozzarella, sauted broccoli rabe and pesto.
