a Southern staple

Grits

by pome lover

It starts with a grit, except that it’s plural
It’s liked in the South, both urban and rural.
Three ways you can fix ‘em: one’s just with butter;
Or you can add cheese; with shrimp is “anutter.”

Two cups of each, “chick” broth and water
Add garlic powder, well, ‘cause you oughta
Add one cup of grits and cook ‘til it’s thick
Read cook time on box, it’s usually real quick.

Remove from the heat, then add, if you please
Butter, ¼ cup, 1 ½ cups Cheddar cheese.
Can add sauteed shrimp to go on the top
And then dig right in and eat ‘til you pop.

Some fried bacon, too, can crumble to add
An extra good taste, for which you’ll be glad.
So, there you have grits, fixed just as you wish
And each way, to me, is a mighty fine dish.

Don’t turn up your nose until you try it;
If left over grits, just cut up and fry it!
And you will say yum
And so will your tum.
