If someone says they do not want your poem/story in the body of an email, but as an attachment (word document to be read blind) and they want a cover letter and short bio...should the cover letter and bio each be separate attachments? And what does a cover letter consist of? I hate to sound ignorant--but I am, really. I've never tried submitting anything before.

You should be OK to have the cover letter and bio as the body of your email, with only the poem/story in one separate attachment with no identifying info on it.
One man's take on life told thru humorous short stories from his childhood on into his mid-50's; from feeling like an outcast in school to being an adult. His intent: hope. Hope in that you shall see, no matter how rough life can seem -and is- at times, that you may be able to enjoy it. Each story will bring a laugh, a smile, a tear, a lesson.
