The milk moon shines upon the fields,
the pastures green with grass,
where cows at dawn will graze with ease
as time moves slowly past.
In May the clover grows so lush,
the Guernseys eat at will,
until the farmers fill their barns
with pails that over spill.
So take your glasses, lift them high
to toast the month of May,
when milk and honey freely flow
in bountiful display.

Milk moon is a traditional designation for the full moon in May, which will occur this year on Saturday, May 9. It refers to the fact that in May the pastures are so lush with grasses and weeds that the cows are well fed and produce plentiful amounts of rich milk.
In Exodus 3 God promises His people delivery to a land flowing with milk and honey, meaning a prosperous land.
Guernseys are dairy cows.
